Jackfruit Biryani (Kathal Biryani)

Ingredients

For marination

  • 200 grams jack fruit, chopped into small pieces
  • 90 grams yogurt
  • 2-1/2 tablespoon ginger garlic paste
  • 1/2 teaspoon chili powder
  • 1/4 teaspoon turmeric (haldi)
  • 1 teaspoon garam masala
  • 2 tablespoon lemon juice
  • Salt as per required

For biryani

  • 4 cups basmati rice
  • 3 tablespoon oil
  • 3 onions
  • 2 inch cinnamon stick
  • 4 cardamom
  • 4 cloves
  • 1 badi elaichi(black cardamom)
  • 1 star anise
  • 2 bay leaves
  • Few sprigs of coriander
  • Few sprigs of mint
  • 4 green chillies
  • A few drops of orange colour (optional)
  • Salt as per required
  • 2 tablespoon ghee
  • 10-12 cashews for garnishing

Directions

  1. To begin making Jackfruit Biryani, grease your hands, a sharp serrated knife and chopping board with oil.
  2. Cut both the ends of the jackfruit and peel the skin like a pineapple. Remove the seeds if any. Chop the flesh into desired cubes.
  3. Boil water in a sauce-pan, add the pieces with some salt and boil for about 10-15 minutes.
  4. When the pieces are soft enough, drain the water and allow them to cool.
  5. Meanwhile, chop the onions and deep fry them to golden brown in the above-given oil. Remove them on the tissue paper and set aside.
  6. Once the pieces of jackfruit have cooled, marinate them with the spices mentioned under ‘For marination’.
  7. Wash and soak rice for 1/2 an hour. Boil water in a largesaucepan, add soaked rice to it along with salt and half the whole spices mentioned.
  8. Cook the rice until its done 70 % done. Once it is 70 % cooked, drain the water and keep the rice aside.
  9. Take the same oil in a big saucepan in which you have deep fried the onions. Switch on the flame and add the remaining whole spices, marinated jackfruit, mint, coriander and spread it equally.
  10. Now add the rice and spread it, add ghee and sprinkle the orange colour. Cover the pan with aluminium foil and put in on low flame for 25 minutes on dum.
  11. After 25 minutes, switch off the flame and your biryani is ready to be served.
  12. Serve Jackfruit Biryani with Beetroot Raita or Burani Raita.
