Malai Kofta


For Malai Koftas
  • 3 boiled potatoes, boiled and mashed
  • 200 grams fresh paneer, crumbled
  • 1/2 teaspoon cumin powder
  • 1/4 teaspoon turmeric powder
  • 2 tablespoons gram flour / besan
  • a handful of raisins to stuff the kofta’s
  • salt, to taste
  • oil for cooking
For Gravy
  • an inch piece of ginger
  • 1 tablespoon honey
  • 2 cups of pureed tomatoes
  • 1 teaspoon coriander powder
  • 1/2 teaspoon garam masala
  • 1/4 teaspoon turmeric powder
  • 1/4 cup of fresh light cream or hung curd
  • kasoori methi for garnishing
  • salt, to taste
  • oil for cooking


  1. To begin making, combine all the ingredients for the koftas in a bowl and divide them into lemon size balls. Flaten the balls in the palm of your hands and place a couple of raisins in the center. Close the kofta dough back into a ball and keep aside.
  2. The next step is to cook the Malai Koftas either in the Oven or in the Kuzhi Paniyaram Pan
  3. If you plan to bake the koftas in the Oven; then place the kofta balls on a greased baking sheet. Brush the kofta balls with some oil and bake in a preheated oven (200 C) until the koftas turn golden brown in colour. Remove the kofta’s from the oven once baked and keep them aside.
  4. If you plan to use the Kuzhi Paniyaram Pan; then place the kofta balls in the pan’s cavities; drizzle the koftas with a little oil and pan fry them until golden brown on both sides. You will have to flip the kofta balls so they fry on all sides evenly.
  5. The next step is to make the Kofta Curry
  6. Heat oil in a heavy bottomed pan; add in the grated ginger, sauté for a few seconds. Stir in the tomato puree, honey, turmeric powder, cardamom powder, garam masala powder, salt and chilli powder to taste. Bring the mixture to a boil and simmer for a couple of minutes till the tomatoes get cooked through.
  7. Finally add in the cream and the kasuri methi and stir it into the kofta curry. Add in the cooked malai koftas, cover the pan and simmer until the curry and flavours get absorbed into the koftas.
  8. Adjust the consistency of the koftas by adding water if required. Do make sure to check the salt and spice levels and adjust according to your taste.
  9. Serve the delicious Sweet Malai Kofta Curry for a quick and healthy weeknight dinner or even for parties.
