Spicy Mushroom and Spring Onion Toast


  • 200 grams mushrooms, sliced
  • 1 small onion, finely chopped
  • 4-5 stalks spring onions, finely chopped
  • 2 cloves garlic, grated
  • an inch piece of ginger, grated
  • 1 teaspoon white sesame seeds
  • 1 dry Kashmiri red chilli, deseeded and chopped
  • 2 teaspoons red chilli-garlic sauce
  • 1 teaspoon tomato ketchup
  • 1 teaspoon dark soya sauce
  • 1/2 teaspoon vinegar
  • pepper, to taste (optional)


  1. To begin making the Spicy Mushroom and Spring Onion Toast, we must first prepare the mushroom filling.

  2. Warm a teaspoon of oil in a pan and add the sesame seeds, chopped dry red chilli and ginger garlic paste to it.

  3. Drop the finely chopped onions and sauté for a minute till they are pale and soft. Next add the red chilli-garlic sauce, tomato ketchup, soya sauce and vinegar. Mix together till it forms a shiny glaze.

  4. To this, add the mushrooms and spring onions, saving the spring onion greens to be used at the end.

  5. Toss together so the sauce coats the mushrooms and spring onions. Allow the mix to cook through and the excess moisture to evaporate. You should be left with a dry mixture.

  6. Add freshly ground pepper if you want an extra hit of spice and combine. Garnish the mixture with half the spring onion greens. Toss gently once more. Check the salt and spices and adjust to suit your taste.

  7. Toast your favourite sliced bread in a toaster or oven and spread the slices out on a platter.

  8. Sprinkle the leftover spring onion greens over the Spicy Mushroom and Spring Onion Toast and serve immediately.
